Recipe: Schitt's Creek Cookie

It’s the time of year to make your loved one something sweet & ridiculous. And whether it’s because you want to treat them or because you want to embarrass them, this giant chocolate cookie heart will do quite well. To recreate David & Patrick’s anniversary cookie, I decided to make a heart-shaped pan using heavy duty aluminum foil, rather than buying something I’d be unlikely to use more than once a year. You can free-form your aluminum foil pan, or watch the video to see how I formed mine using a custom cardboard heart.

Enjoy, and remember, it’s only “too much” if you’re speaking figuratively.

 
 

Schitt’s Creek Cookie

  • 2 1/4 cup flour

  • 1 tsp baking soda

  • 1 1/2 tsp salt

  • 1 cup butter

  • 2 eggs

  • 1 cup brown sugar

  • 1/2 cup white sugar

  • 1 tsp vanilla

  • 1 cup semi-sweet chocolate chips

  • 1 cup milk chocolate chips

Preheat oven to 375°F. In a small bowl, combine the flour, baking soda and salt. Mix well, then set aside.

Next, brown the butter: Put 3/4 cup butter in a medium, light-bottomed saucepan. Heat over medium-high until the butter develops an amber color and a nutty fragrance. Immediately remove from heat and transfer butter to a large mixing bowl with the remaining 1/4 cup butter. Stir until all of the butter is melted.

Add brown sugar and white sugar to melted butter & stir until well-combined. Add eggs, vanilla and mix well. Add flour mixture and stir until no streaks remain. Stir in all of the chocolate chips. Transfer to dough to heart-shaped pan (or pan made out of aluminum foil), pressing in to the edges. Bake for 18-20 minutes, until golden brown.

Small Batch Buttercream

  • 1/4 cup room temperature butter

  • 1 cup sifted powdered sugar

  • 1 tbsp cream or milk

  • 1/4 tsp vanilla

  • pinch of salt

  • red food coloring


Using a stand or hand mixer, cream the butter.until fluffy. Add the powdered sugar and mix until the mixture comes together in a frosting-like consistency. Add cream, vanilla, and salt and stir until well-incorporated. Add a small amount of red food coloring to make the frosting a light pin color. Transfer frosting to a piping bag with a round or star-shaped tip. Use frosting to decorate your giant cookie with a message.
